This coffee is from a lot produced by producer Niguse Gemeda Muge, winner of the 2020 international Cup of Excellence competition, and comes from the high altitudes of Bombe Mountain in Ethiopia.
The cherries slowly ripen in a cool environment above 2,300m, developing a rich sweetness and complex flavor. Only fully ripe cherries are carefully hand-picked locally and refined using a natural process.
The coffee beans grown in this high altitude region with large temperature differences are densely packed. By roasting them at high temperature and pressure to open up the flavor, we have created a coffee that has a rich stone fruit flavor.
The cup features a gorgeous aroma reminiscent of jasmine and a ripe fruit aroma like peach. It has a refined sweetness like brown sugar and a layered fruit flavor. The taste is silky smooth, with a soft acidity that leaves a pleasant aftertaste.
